Chicken Saloona: unforgettable spices
In the part of the Arab world, a lot of our dishes use the same traditional spices like turmeric, cardamom, and cinnamon, etc. For this dish, these spices are mixed in a soup-like meal with soft chicken. And it's severed with additional white rice, the saloona is absorbed by the rice, when you take a bite you taste the rice, chicken and the spices from the saloona.
When I was young I used to have this dish for lunch on a regular basis, sometimes my family would switch it up and add beef instead of chicken. Every bite has a taste of liquid, softness, and mushiness flavor. With every chew, the rice, chicken, and the saloona become mixed in together and become softer to swallow. Ingredients:
- One whole chicken
- One Carrot
- A quarter of a pumpkin
- A quarter of an eggplant
- One potato
- Half a cauliflower
- Half a broccoli
- One onion
- One tomato
- One teaspoon of garlic and ginger paste
- One lemon
- A quarter of a cinnamon stick
- 2 pieces of bay leaves
- Half a teaspoon of black pepper
- One teaspoon of Tumeric powder
- One teaspoon mixed spices
- Pinch of cumin powder
- Pinch of coriander powder
- Half a small box of tomato paste
- Pinch of cumin seeds
- One tablespoon of chopped parsley leaves
- Two mint leaves
- One teaspoon of curry powder
- Half bell pepper
- One teaspoon of salt
- Cooking oil
- One Maggi cube
- water
Step 1: Before cooking the saloona cook the rice. Start by cutting the tomatoes, onion, bell pepper into small square pieces to make sure the juiciness is mixed in with the rest of the ingredients. Grab a crater and take the ginger and rub it on the crater until the outcome is in a mushy like ingredient.
Step 2: Take the coriander leaves, parsley leaves and mint leaves slices and add it to a small bowl, and keep it on the side.
Step 3: Peel the carrots, potato, and pumpkin. Then cut the carrots, potato, pumpkin, and eggplant into medium to small slices. Then cut the broccoli and cauliflowers into quarters. Make sure it is washed before cutting it. And then wash the chicken, and cut the whole chicken in half, then cut the upper part into 4 pieces, and the lower part in two pieces.
Step 4: Grab a pot and place it on a stove, turn on the stove, and put it on medium heat. Wait 1 minute for the pot to heat up, then pour in 3 tablespoons of cooking oil. Then take the cinnamon stick, dry lemon, coriander seeds, cumin seeds, and bay leaves and pour it in the pot and also put in the Maggi cube and mix it and, wait for 2 minutes until you put in the next ingredients.
Step 5: After you have waited for 2 minutes, grab the sliced onions and place it in the pot and mix it in with the rest of the ingredients. While you are mixing the onions add the garlic and ginger paste and stir it around the pot with the ingredients. When the onion becomes a little bit brown you add the bell pepper square and the tomato slices and mix it. Then add the chicken pieces and mix the ingredients with it.
Step 6: While you wait for the ingredients in the pot, grab all of your spices mentioned in the ingredients, a small bowl, and the tomato paste. Start by adding a pinch of Coriander powder, then add a teaspoon of curry powder, then add one teaspoon of mixed spices, add a pinch of cumin powder, add half a teaspoon of black pepper, add one teaspoon of Tumeric powder, then add half a box of tomato paste into the small bowls with the rest of the spices. Fill in a quarter of a cup of water into the bowl and mix it.
Step 7: Grab the bowl of the mixed spices and tomato paste and add it to the pot, and use the spoon carefully to spread it while adding it to make sure that it's spread on the chicken.
Step 8: Keep mixing it a bit, then close the lid and wait 5 minutes. After 5 minutes are up, add 4 cups of water. Then mix all of the added ingredients in the pot.
Step 9: Grab the small bowl of the coriander, mint, and parsley leaves and add it into the pot and mix it in. Then close the lid and wait until lit starts to boil.
Step 10: When it starts to boil, add the potato and carrot slices. Wait 10 minutes, then put in the pumpkin slices. Then wait another 10 minutes. Then add the remaining vegetables (Eggplant, broccoli, and cauliflower). Then close the lid and wait until the vegetables are a bit soft and cooked. You can keep checking on it while you wait.
Step 11: After you have finished cooking the saloona, make sure the vegetables are cooked. And it's ready to be served with the rice.
